I will never forget the first time a client who had a corn allergy wanted a cake that was decorated almost entirely with fondant. I remember looking on the internet for a recipe and not finding one! So, I created my own. Once you try it, you will be shocked with just how EASY this is and SO much better tasting than store bought. You may also not realize that Wilton brand fondant contains gluten as well. Here is a picture of that label

Here is what you will need for my recipe:
*”Dandies” brand corn free marshmellows
*Organic powdered sugar (tapioca starch and organic sugar)
*Melt dairy free soy free “butter” OR organic butter
16 oz Dandies marshmallows (1 1/2 bags)
2 lbs. organic corn free powdered sugar
2 TBSP butter
1/4 cup water
1 tsp vanilla
Step 1. Sift together 2 lbs of powdered sugar. Organic corn free powdered sugar tends to be lumpier than a corn starch variety.
Step 2. Set aside 2 TBSP butter in a bowl.
Step 3. Melt 16 oz. marshmallows in a microwave safe bowl. Begin with 30 second increments and stir each time. Continue to microwave until smooth.
Step 4: Add water and vanilla to hot marshmellows and stir.
Step 5. Transfer marshmellow mixture to stand mixture and slowly begin to add powdered sugar. Set aside 1 cup powdered sugar. Dough will become sticky and start to form a ball. There will most likely be powdered sugar on the bottom of the bowl. That is okay!
Step 6: Transfer dough to powdered sugar surface.
Step 7. Slowly begin to knead in remaining powdered sugar until you have an elastic ball. It will be pliable but not sticky.
Final fondant will be smooth and elastic.
Store wrapped in plastic wrap and in an air tight container.
This fondant can be colored by adding color and kneading it in.
